Candy Cane Popcorn Hot Chocolate

On a cold winter night snuggling in front of the fire is there anything better than a lovely rich steaming Hot chocolate? Now as you may or may not know I don’t like hot drinks; they make me sweat on the inside…. Hot Chocolate however…. Well, that’s more like liquid desert, so that, I can definitely get on board with!!

This recipe makes a super, rich, ultra-chocolatey, hot chocolate that warms the cockles, with a cheeky Uniqucorn twist of course. Perfect for Christmas eve whilst you’re waiting to see if you’re on Santa’s naughty or nice list this year.

 

My recipe is suitable for Vegans, using Coconut milk, dark chocolate, and Heavenly Vegan whip, but that doesn’t mean its only for vegans. Just switch for regular milk and Squirty cream if you would prefer. I would recommend however even if you’re not vegan, you need to try a Coconut milk hot chocolate at least once in your life!!! It just adds another super luxurious, tasty layer of yumminess to any hot chocolate and gives it an amazing thick creamy texture. I would never go back to normal milk hot chocolates now.

 

To start with we want to prepare the rims of the Latte glasses to give it an extra special look. Melt 40g of the Chocolate in a bowl over a pan of boiling water. Make sure the bottom of the bowl doesn’t touch the water as this can lead to the chocolate burning. Once the chocolate is melted I find it best to let it cool a little before dipping the edge of your glasses in. Whilst its cooling pop half of your Candy cane Uniqucorn into a bowl and crush is with the end of a rolling pin. Make sure you get the popcorn crushed quite small, so it’ll stick to the Chocolate well. Then you’re ready to dip the edge of the glass into the melted chocolate, give it a little wiggle around to coat the edged down as far as you can go, I aim to try and get the rim coated to between ½ cm to 1cm.

Now to make the Hot chocolate. This recipe is suuuuupppper Chocolatey, it doesn’t have that much sugar in as that will come from stirring the candy cane into it to dissolve at the end. I use dark Chocolate because I love the richness of it, but if you would prefer it a little sweeter feel free to use milk chocolate instead. I also use cacao powder too for the same reasons, but you can replace this with standard coco powder.

Pour your coconut milk into a saucepan, add in the Cacao and Sugar and grate in the remaining chocolate. Using the fine grater just helps it all combine and melt together quicker. A sneaky little trick I do too, just to make it even chocolatier, is scrape out the left-over chocolate from when we were doing the rims of the glasses. Hehe. Waste not want not as my Nan always used to say! Heat it all together over a medium-low heat until it’s all melted together. I don’t like to let it boil here, you don’t want it so hot it burns! It should look super rich and dark brown and creamy now, just like the Chocolate river in Charlie and the Chocolate Factory. Divide it between your glasses but don’t fill them all the way up to the top you need to leave about 1cm room for the Whip.

Now just the finishing touches, top with whip, the remaining Uniqucorn and hook a candycane over the side. Perfect for stirring it all together a hooking out the Popcorn. YUMMY!

Candy Cane Popcorn Hot Chocolate recipe

Ingredients:

80g Dark Chocolate

20g Candy Cane Flavoured Uniqucorn popcorn

400ml Coconut Milk (or any milk of your choice)

2 tbsp Cacao

1 tbsp Sugar

Vegan whip/Squirty cream

2 candy canes

 

  1. Melt 20g of the chocolate in a bowl over a pan of boiling water. Set aside to cool down slightly. Whilst cooling, pop half of the Candy cane popcorn in a bowl and crush with the end of a rolling pin.
  2. Using 2 Latte glasses dip the rims into the melted chocolate and give it a good wiggle around to get the chocolate about 1cm down the edges. Then repeat in the crushed popcorn pressing any loose pieces down.
  3. Pop the milk, cacao, sugar and remaining chocolate into a pan and gently heat over a medium/low heat. Gently stir until all the chocolate is melted and the mixture is smooth and combined. Don’t bring it to boil.
  4. Pour the mixture between your 2 latte glasses then top with Whip and the remaining popcorn. Finish it off by hooking your Candy cane over the edge of the cup with the long part inside the drink.
